Essential green soup: a super simple meal to fuel your body with a multitude of nutrients one mouthful at a time! Ingredients include: broccoli, silver beet, English spinach, leek, garlic, lemon rind, reduced salt chicken stock (which can easily be substituted with vegetable stock), and silken tofu. For those unaware, silken tofu has a creamy texture and is a rich source of protein. This recipe also includes kale which I am really keen to explore in my cooking. However, I couldn’t find this protein rich, versatile veggie at my local supermarket. Do you know any good, healthy, delicious recipes that include kale?

Essential green soup (from Donna Hay Fresh and Light)
2 teaspoons olive oil
1 leek, trimmed and sliced
2 cloves garlic, sliced
400g broccoli, chopped
150g kale, roughly chopped
100g English spinach, roughly chopped
100g silver beet or Swiss chard, roughly chopped
2 litres chicken or vegetable stock
2 teaspoons grated lemon rind
sea salt and cracked black pepper
300g silken tofu

Heat a large saucepan over high heat. Add the oil, leek and garlic and cook for 5 minutes or until very soft. Add the broccoli, kale, spinach, silver beet and stock. Bring to the boil, reduce heat, cover and cook for 5 minutes or until the vegetables are just tender. Stir through the lemon rind, salt and pepper. Using a stick blender or a blender, puree the soup until smooth. Add the tofu and blend until smooth. SERVES 4
